Ayurvedic eating classifies food by quality - heating or cooling, heavy or light, moist or dry - and matches it to the person and the season rather than prescribing one diet for everyone.

The practical shape of it

Warm, cooked, easily digested food in cold weather. Cooling, lighter food in summer - which is why curd, cucumber, coconut water and mint dominate the Indian hot season. Eating the largest meal in the middle of the day, when digestive capacity is held to be strongest. Eating at consistent times. Not eating again until the previous meal has been digested.

Where it agrees with the evidence

Several of these hold up well for reasons Ayurveda did not know at the time. Regular meal timing genuinely suits the body's circadian rhythm. A lighter evening meal suits digestion and sleep. Eating seasonally means eating fresher, cheaper and more varied food. And the emphasis on how a food sits with a specific person is a reasonable description of the real individual variation in digestion.

The tradition's strongest instinct is that digestion comes first. Modern nutrition has been slowly arriving at the same place.

Where to be careful

Restrictive eating justified by constitution can quietly become a nutritionally narrow diet. Anyone with diabetes, kidney disease or an eating disorder should take dietary advice from their treating doctor first, whatever framework they otherwise follow.
